Avocado Gazpacho

So, I don’t remember if I have expressed my feelings on avocados on this blog yet. Here they are: I LOVE AVOCADOS. They are one of my favorite foods. I regularly used to have just an avocado, maybe with some cottage cheese or something, for a light lunch or dinner. I would eat them every day if I could. And so, a few weeks ago, while it was still in the 70s (ridiculous!), when Erik and I were trying to come up with an interesting soup to make, I thought of this: avocado gazpacho.

Agnello Con Piselli

Yo Yo Yo…It’s been a while hasn’t it…What represents winter & the cold wet nights better than a hearty stew so a simple, tasty, lamb stew is my comeback post, (I know, I know I’ve had about 10 but at least I try). I wish I could say this is my recipe but I have to give credit to the “Two Greedy Italians” for this one, I’ve made lamb stew before but I like the addition of chili & white wine vinegar in this one so I’ll give you their recipe, I’m sure they won’t mind.

Roasted Heirloom Tomato Soup

This post is dedicated to my friend Annette. I know she reads my blog and she’s probably noticed that this is my second soup post in just a few short weeks. Why would she notice, you ask? Because I’ve always told her that I didn’t like soup. (Get your gasps of disbelief out of the way now.) It’s true. For a long time I really didn’t like it. Well, let me rephrase that — I didn’t prefer it. I’d eat soup if it was served to me, but it wasn’t anything I’d go out of my way to order at a restaurant or make at…

Weeknight Simplicity: Winter Squash Soup

Oh my God is this good. I know that’s exactly what Ina says, but the statement couldn’t be more true when it comes to this soup. You will be blown away on so many levels.  First, I would have never thought to categorize this as a simple weeknight meal until I learned how easy it is to peel a butternut squash with a vegetable peeler (why was I ever going at that thing with a knife?).  You could take it a step further and just purchase pre-cut squash. Second, who knew adding pureed pumpkin to butternut…

End of Summer Corn Chowder

As the song goes, €œI’€™m as corny as Kansas in August…And I proudly admit it. The end of the summer most assuredly sets my mind on certain culinary treats€“ and fresh corn is definitely one of them. Oh, there are bushels of it available throughout the summer, to be sure. However, this time of year offers the last chance to sample the local harvest and that makes it all the more sweet. So off I drive to suburban and yes, rural areas surrounding New York City in search of those golden kernels…

Battle Corn Chowder vs. Corn Vichysoisse

I have been meaning to post about corn soup for a few weeks now but some tomatoes and blueberries got in my way! In a battle of epic proportions (well, epic in my mind anyways!), I pitted the legendary champion, Cook’s Illustrated, against fledgling culinary newcomer, Gwyneth Paltrow. Yes, that Gwyneth Paltrow. Academy Award winning actress, singer, wife of Coldplay rocker Chris Martin, mother to Apple and Moses and possessor of gorgeous hair. She recently released a cookbook called…
