Sky High Carrot Cake for Two

I have seen carrot cake recipes with crushed pineapple and coconut, and one with chopped apples too, all of which I am tempted to try. But I thought to stick to my plain carrot cake recipe, the one that V loves. He is not used to changes in his food, and I had my doubts that he might not welcome the variations. Since I was making the cake more for him than me, I am leaving my experiments for another day.

Oatmeal Cookies (Gluten Free)

I’ve been sort of busy. I’ve gone completely overboard and I’m pretty sure I’ve single handedly caused a local butter shortage. I made this eggnog fudge. I made these coconut lime bars. I made this peppermint mocha cake. I made homemade poptarts. I made these chocolate crinkles. I made these linzer cookies. I made these cowboys cookies. I made these pistachio orange cookies. I made these pignoli cookies. You just got a cavity reading that. I also made these gluten free oatmeal cookies. Look down…

Warm Custard Spoon Bread

Doesm’t that just sound like the food version of cuddling on the couch in front of a fire? Warm custard spoon bread. Every word there is like a friendly little squeeze. Every word there says to me, “I am unbelievably amazingly delicious and decadent. You should probably drop everything and make me right now.” I don’t know why but I am an absolute sucker for foods that have the word spoon in their title.

Cranberry-Cinnamon Scones

I have been trying not to look at the calendar too much. When I do, it sticks its tongue out at me for having fallen behind so much. I have two days to cross things off my holiday list–there’s still hope! My husband and I are celebrating Christmas a bit differently this year so time is even more of a factor. That said, I am still looking forward to Christmas–I have reminded myself that this time of year is not about the gifts still unwrapped…

Earl Grey Tea Cookies, Take Two

First of all, I’d like to thank everyone who left a comment on my last post. My family has gone through a tough time lately, and although I’d prefer not to get into the details here, the virtual hugs are very much appreciated. Secondly, I’d like to apologize to all my subscribers and followers for hitting “publish” instead of “preview” earlier today. This was the second time I’ve made that mistake, and I’m hoping I’ll never do it again.

Struffoli Balls Not From the Bakery For Anthony

This Strufolli recipe is for Anthony. Anthony commented on my Struffoi recipe and gave me a great laugh. I ordered the Struffoli balls and didn’€™t make them for Easter. Now it’s Christmas and time to make them again. Sprinkle With Rainbow Nonpareils Anthony’s Comment: “They look wonderful, but there’s no recipe! Go to an Italian bakery and BUY them? That’s like having a meatball recipe which instructs: “Go to the delicatessen and buy the meatballs and a jar of sauce. Remove lid from jar, pour contents…

Jack Daniels Truffles – Recipe

I was invited to my friends house for dinner this week. It got to Monday and I started to panic. What was I going to take with me?! A bottle of wine is too boring, a dessert too hard to transport, flowers were out of the question as the host is a man and taking nothing is just plain rude. After much deliberation I settled on Jack Daniels truffles for a sweet post meal treat.
