Lemon Rosemary Chicken with Cheddar Grits and Roasted Asparagus

Usually I’m pretty modest (if not critical) when eating my own food, but tonight, I can honestly say that this dinner was something you could easily find in a restaurant — and it’s so basic. I had some chicken breasts staring at me from the fridge (what a conundrum) so I pulled out my trusty 3-ring binder of recipes and looked for something to cook under the “chicken” tab.

Green Bean Casserole with Madeira Mushrooms and Chicken

Remember green bean casserole growing up? I do – cream of mushroom soup mixed with the beans, and those yummy canned fried onion bits on top. Fast forward to today – here is a more grown-up version. Much healthier in my opinion, and I added some cooked chicken to make it a complete meal. This was fabulous.

Lady Marmalade Chicken Salad

I saw this recipe in the Food Network Magazine and had immediately wanted to try it; the idea of roasting a chicken in an orange marmalade sounded delicious! The chicken is then tossed into a salad of green apples, red grapes, shallots, Greek yogurt, cashews, and a bit of curry and cumin seasoning This combination reminds me of my favorite Cos Signature Salad, which is basically greens with red grapes, green apple, Gorgonzola cheese, pistachios and a shallot dressing…

Riche de Poulet Provençal

Today, while I was trimming back my lavender, I obviously put them in a vase, and this inspired me to create a country style french meal. Which in fact, is usually quite a simple meal with very delicate and subtle flavours. Naturally, I had a few tomatoes from my own garden that turned blood red, so I had to use them too! I felt like a french lady with my own chateau in Provence!

Grilled Herbed Chicken

I’m a big fan of grilling (No pots and pans to clean! Big flavor!) and a big fan of chicken (Delicious! Affordable!) but typically uninterested when the two get together. Either the bird gets dried out, or a too-sweet barbecue sauce chars to death in the heat, and I wish we’d just settled on kabobs or burgers instead. Until, dear reader, I got the hang of it. The trick (and maybe this is old hat to you, but I’m terribly excited) is to butterfly the chicken so it lays flat on the grill…

Chicken with Mustard Cream Sauce

Learning to love mustard is one of my culinary projects right now. There’s always something out there that you’ve never had a taste for, have never quite appreciated, or have never even tried, right? I’ve been working on brown mustard for several months now, and I’m happy to say that I’m finally beginning to identify it as a food that I enjoy. The true test? Cooking with it and using it as a main ingredient, versus dolloping a touch on a slice of cheese or sausage.
