Chocolate Cranberry Brownie Muffins

So it’s December and I’m so happy to be back to making muffins. After taking a month’s hiatus from Muffin Mondays I realized that I missed having moist, freshly baked muffins in my home every week. I also realized that while I decided to take a break for the month of November, that’s when An decided to assign the most deliciously decadent muffins after a few weeks of healthy choices. Blueberry Pancakes: Vegan and Grain-Free

This is a very special, very messy breakfast…this pancake recipe was inspired by the great Ricki, from Diet, Dessert and Dogs. Her original recipe was for lemony pancakes, but i was feeling the almond/blueberry pairing this morning. I made a few modifications to use what I had up, and voila! A beautiful double-stack of pancakes adorned our table! I was so thrilled about them, I forgot to photograph them before I started to gobble them up.
