For the Grill-Master in Training…Kebabs

With the 3-day weekend here, a break in the non-stop thunderstorms, and new propane for the grill, how can I not want to cook?! For those of you who are beginner level grillers (like me), this recipe is unique yet simple enough to make without over charring dinner. I was skeptical about grilling oranges, but it proved to be a great compliment to the chicken. Don’t forget the cayenne pepper! It really pulls the flavors together with that extra heat hot sauce junkies (like myself) are always searching for…

Salmon in Foil – Summerstyle

This dish is…great for both your oven at home and on the grill in the park. If each salmon slice gets it’s own piece of foil, then you don’t even need plates outside! (If you’re careful not to poke the foil that is). Ah, this is so easy, healthy and yummy that it only needs a few sentences. For the vegetables, we used red peppers,…

Summer Funtime: Grilled Pizza

Over Memorial Day weekend, Dan and I packed up with two of our good friends and our two favorite dogs and trundled our way up to New Hampshire…I made grilled pizza It was a perfect Summer evening meal!  I made the dough in the morning, let it rest in the fridge all day, and while my friends lit the grill and preheated it, I prepped the toppings.  With the help of some delicious cheese from the Sandwich Creamery, it was among the more delicious meals I’ve ever cooked.

BBQ Chicken with Bacon, Corn, Hominy and Tomato Salad

Two day heat wave today and tomorrow, 97 degrees.  Why is it, when it’s so hot outside, we decide to increase the heat by lighting a fire to cook our food?  It’s a mystery. The bacon, corn, hominy and tomato salad was inspired by the contents of my cupboards. I also made a small confit of thyme sprigs, onion, garlic and red bell pepper for the chicken. BBQ Chicken with  Bacon, Corn, Hominy and Tomato Salad 4 chicken thighs, rubbed with Emeril’s essence and grilled 3 strips of thick sliced bacon,…

Citrusy Chicken Kabobs with Kumquats & Fennel

I’ve received countless inquiries about what I eventually did with those kumquats that inspired dinner the other night!! OK, so no one’s asked. But that’s just because you’ve had a crazy fun busy weekend, right? We just returned from a few quiet days in Central Oregon where we played scrabble on a sunny patio, walked through meadows with our dogs, went to bed early, and ate simply. Knowing there was a grill there, I packed my bag of lovely kumquats. I thought that if anything could improve upon the…

Grilled Corn on the Cob

This is a great way to cook corn on the cob. The husk traps the heat and steams the kernels and the fire gives a nice smoke as well. The corn can also be cut from the cob after cooking to make a number of salads and salsas. To make the herb butter bring one stick to room temperature add whatever spices sound good and mix with a fork.
